What I’ve been cooking lately

This post has been a long time coming; partly because I’ve not been cooking every night but mostly because I’ve been in a rut and what I have been cooking you’ve already seen! I took some time to peruse Tasty Kitchen and now have several weeks’ worth of new recipes to try! Those are coming soon. 🙂

Bekka and I enjoyed mini cinnamon rolls with cream cheese glaze, inspired by these Itty Bitty Cinnamon Roll Bites

Easter went by without any special food. It was a great day in other ways. There were jelly beans, though!

I made a cheesecake for Mother’s Day, which I should have taken a better picture of! It had a graham cracker crust and I wound up topping it with chocolate ganache.

One Friday night I made roasted pork loin with balsamic vinaigrette

and popovers, which were delicious.

Then for the Kentucky Derby last weekend Kate and I made mint juleps, of course!

Week of April 4

Nothing too exciting but it was a good week 🙂

Monday night was chicken stir fry with snow peas and pineapple. I thought I had more veggies to toss in but guests sometimes eat more than you think they will!

Thursday night was panko-crusted basil garlic chicken stuffed with goat cheese (similar to this recipe). Friday’s lunch was really yummy leftovers!

On Saturday after the garden festival, some friends came over for the afternoon and we made strawberry shortcakes. They  may not be pretty but they sure were good!

Lots of extra client and pro bono work this week. It’s good to have good work to do!

What’s Going On Right Now (3/27/11)

Phew, what a week! In addition to the usual, I volunteered at the Ligonier Ministries National Conference (although unfortunately got a migraine on Friday), and today we (Chancel Choir) sang for two services at Saint Andrew’s before I photographed the latest Fine Arts event.

I went to Hobby Lobby and got some fun crafty things for their visit. I also grabbed a couple extra things that have become three new cocktail rings for me (about $5 each).

Have I mentioned (ha!) the awesome Fine Arts series at Saint Andrew’s? This afternoon Ben Lane gave an organ recital.

I’m trying to be disciplined about taking more careful photos and posting them without editing. (It has the secondary benefit of saving a great deal of time!) Forgive my learning curve. 🙂

What I’ve been cooking lately

On Thursday I made chocolate fondue and a platter of apples, strawberries, pound cake and pretzels to my grandmother and aunt’s house. Both of their birthdays happened in the last month and I hadn’t gotten to celebrate with them yet because of my ankles.

I had a lot of client projects this week so I didn’t cook full meals as much as I’d like. Next week is looking busy too… but hopefully I should be able to cook a few nights!

Saturday morning

Since my fall, things have been slipping through the cracks. I needed to carve out a day to press the proverbial reset button.

I plan to do laundry, dishes, dusting and vacuuming but also relax a bit; I shared this on Instagram this morning:

Then I made biscuits (a double batch, so I can eat them all week)…

I cut my biscuits in triangles like scones because it’s quicker/easier, and works the dough less so the biscuits stay lighter and fluffier.

(In case you’re wondering, of course Alton Brown has the best biscuit recipe ever.)
